About This Position

Job Summary

The Marriott Resort & Stellaris Casino in Urbanización El Vedado, San Juan is seeking an experienced Executive Sous Chef to lead culinary operations and support the Executive Chef in delivering exceptional dining experiences.

Key Responsibilities

  • Assist the Executive Chef in menu development, recipe creation, and food costing.
  • Supervise kitchen staff, ensuring adherence to safety, sanitation, and quality standards.
  • Manage daily food preparation, plating, and service for all restaurant outlets and banquet events.
  • Train and mentor culinary team members, fostering a culture of continuous improvement.
  • Monitor inventory, place orders, and control waste to meet budgetary targets.
  • Collaborate with front‑of‑house managers to ensure seamless service and guest satisfaction.

Qualifications

  • Proven experience as a Sous Chef or similar role in a high‑volume, upscale hotel or resort.
  • Culinary degree or equivalent professional training.
  • Strong leadership, communication, and organizational skills.
  • Knowledge of local and international cuisines, food safety regulations, and cost control.
  • Ability to work flexible hours, including evenings, weekends, and holidays.

Compensation

Annual salary: $87,638 (USD) – competitive benefits package.
